- Baked beet chips
- Green Beans Amadine (from The Vegetable Dishes I Can't Live Without by Mollie Katzen)
- Szechwan Tofu Triangles in Triple Pepper Sauce (from The Enchanted Broccoli Forest by Mollie Katzen)
- Chili Cabbage (from The Vegetable Dishes I Can't Live Without)
- A Cheese Souffle (from The Enchanted Brocoli Forest) served with a tomato, onion, cucumber salad with a simple vinaigrette (from The Moosewood Cookbook by Mollie Katzen)
